Spinach and Bacon Crust-Less Quiche
Ingredients
1/2 medium chopped white onion
1/2 cup precooked bacon bits
1 cup feta
1/2 cup grated monteray jack cheddar mix
2 tbsp olive oil
1 tbsp minced garlic
Directions
Preheat oven to 350 degrees Fahrenheit and grease 9 x 9" baking dish.
Heat olive oil over medium heat in a large pan. Add garlic and onion and cook till tender. Once tender add spinach till just wilted. Spread evenly in baking dish.
Add feta and bacon into baking dish. Beat eggs and pour over spinach mixture. Sprinkle with cheese and bake for 30 minutes till egg is cooked fully and top is lightly brown.
