Ingredients

5 egg whites

1 1/4 cups white sugar

1 tsp vanilla

1 tsp lemon juice

2 tsp cornstarch

1 pint whipping cream

1/2 chopped pineapple

1/2 lb chopped strawberries

1/2 cup fresh blueberries

Directions

Preheat oven to 300 degrees Fahrenheit. Line a baking sheet with parchment.

Beat egg whites in a large bowl till stiff peaks form. Add sugar in slowly whilst beating egg whites till all of the sugar is beaten in. The mixture should be thick and glossy.

Gently fold in vanilla, cornstarch and lemon juice into the egg whites.

Spoon mixture onto parchment into desired shapes. If spooning into circles spread to the outside making the sides a bit higher than the middle.

Bake in the oven for 45 - 50 minutes until meringues are stiff and dried out. Allow to cool on wire wrack.

Beat heavy cream until it is whipped into stiff peaks.

Spread whipping cream on to the meringue and top with fresh fruit. The pavlova should be served immediately.
