Ingredients

1 cups warm water

4 1/2 tsp instant yeast

1 tbsp white sugar

1 tsp salt

2 cups all purpose flour

1 1/2 cups whole wheat flour

1 egg

1 tbsp water

Directions

Gently mix yeast, sugar and warm water and let sit for 10 minutes till yeast activates.

Mix 2 cups of whole wheat/ all purpose flour with the salt in a large bowl and add to the yeast mixture.

Mix in the remaining flour and knead on a floured surface for 5 minutes. Should form a firm dough.

Place dough in a large greased bowl covered with saran. Allow to rise till dough doubles in size about 1 - 2 hours.

After the dough has risen punch down and break into 10 even balls. Allow dough balls to rest for 5 minutes. Shape into bagels by making a hole in the center and stretching the middle to be about 2" wide. Cover with a cloth and allow to rise for 15 minutes.

Preheat oven to 350 degrees Fahrenheit. Bring a large pot of water to a simmer with a pinch of salt.

Drop 2 - 3 bagels into the boiling water at a time for 45 seconds turning each once. Drain bagels and put on a parchment paper lined pan.

In a medium bowl beat egg with water. Brush egg mixture onto the bagels. Bake for 35 minutes flipping once in the middle. Bagels are finished when they are golden brown and shiny.
