Ingredients

2/3 cup unsalted butter

1 cup white sugar

1 large egg

1 egg yolk

3 tbsp lemon juice

2 cups flour

2 tsp baking powder

1 pinch salt

1/4 cup powdered sugar

Directions

Preheat oven to 350 degrees Fahrenheit. Cream butter and sugar together in a medium bowl. Add in the egg and egg yolk, lemon juice and mix thoroughly.

In a separate bowl mix together the flour, baking powder and salt together. Add the dry ingredients to the wet ingredients until combined fully.

Form dough into 1" balls and roll in powdered sugar. Place cookie balls onto parchment paper lined baking pans. Bake in the oven for 9-10 minutes until edges are lightly browned. Sprinkle remaining powdered sugar onto the cookies and allow to cool.
