Ingredients

1 tbsp olive oil

450 g sausage (your preference italian or chorizo work well)

1 medium onion chopped

4 cloves of chopped garlic

1/2 tbsp thyme

15 oz. white kidney beans rinsed

2 cups chicken broth

10 cups baby spinach

1 pinch pepper

Directions

Cook sausages in a large skillet over medium heat until they are cooked through and browned approximately 15-20 minutes. Set aside.

Heat oil in the same skillet where sausages were cooked. Add garlic, onion and thyme. Cook until onion is softened.

Add beans, broth and pepper to onion mixture crushing some beans with the back of the spoon to allow stew to thicken cook for approx. 8-10 minutes.

Add spinach to the stew by the handful until leaves are wilted. Remove from heat.

Cut sausage into slices and add into the stew. If you find the stew to be too thick add water until you have reached your desired consistency.
