Ingredients

1 medium spaghetti squash

1 cup pesto, recipe here

1 cup mushrooms

1/2 cup chopped tomatoes

1 tbsp butter

1 cup shredded mozzarella

Directions

Preheat oven to 350 degrees Fahrenheit. Slice spaghetti squash in half and remove seeds. Put both halves face down on a pan. Bake in the oven for 40 minutes.

In a medium frying pan melt butter over medium heat. Add in mushrooms and cook till soft.

Remove spaghetti squash from the oven and use a fork to break up the insides to create the 'noodles'.

Pour pesto on to each half of the spaghetti squash. Top each with mushroom and tomato. Sprinkle mozzarella on to both halves and bake in oven for 15 - 20 minutes until cheese is melted and bubbly.
