Ingredients

15 oz. canned chickpeas

1/4 cup lemon juice

1/4 cup tahini, recipe here

1 tbsp minced garlic

2 tbsp olive oil

1 pinch salt

1 tbsp fresh chopped parsley

2 tbsp water

Directions

In a food processor pulse tahini and lemon juice till combined for about a minute.

Drain and rinse chickpeas then add half to the food processor along with the olive oil, garlic, salt and parsley. Pulse till smooth and then add the second half of the chickpeas with water and continue pulsing till you reach your desired consistency. Serve with cucumbers, carrots or tortilla chips.
