Ingredients

1 head of cauliflower, chopped

1 large leek chopped

1 tbsp Kirkland Signature Minced California Garlic, 48 Ounce

1 large potato peeled and cubed

1 tbsp curry powder

1/2 tbsp ground cumin

1/2 tsp nutmeg

4 cups chicken or vegetable broth

2 pinch pepper

1 cup water

evaporated milk

1 cup shredded cheddar cheese

1 cup wild rice

2 cups sliced mushrooms

2 medium carrots, chopped

Directions

Pour rice into the crockpot. Add in cauliflower, carrots, water, broth, mushrooms, potato, leek, garlic and spices. Cook over medium heat for 8 hours.

An hour before the stew has finished cooking mix in evaporated milk.

Once stew has cooked in the crockpot fully stir in cheddar and serve.
