Ingredients

Cookie Dough

3/4 cup unsalted butter

1/2 cup powdered sugar

2 tsp vanilla

1 pinch salt

1 1/2 cups flour

Cinnamon Filling

1 tbsp water

1 egg white

2 tsp cinnamon

1/4 cup white sugar

Cream Cheese Frosting

1/4 cup cream cheese

3/4 cup powdered sugar

1 tbsp cream

1/4 tsp vanilla

Directions

To make cookie dough in a medium bowl cream the butter. Add in the sugar, salt and vanilla until fluffy. Add the flour and mix until combined. Take out dough and flatten into a circle. Wrap in saran and put in the fridge for 30 minutes.

Whisk the egg white with the water in a small bowl till foamy. In a separate small bowl mix together cinnamon and sugar. On a floured surface roll out dough into a 9x12" rectangle. Brush the egg white mixture onto the dough and sprinkle with the cinnamon sugar mix. Roll the dough into a long log tightly. Seal the edges with some of the remaining egg white mix. Cut the log in half and wrap both halves and freeze till firm for about 20 minutes. Preheat oven to 350 degrees Fahrenheit.

Remove half of the dough from the freezer. Slice dough in 1 centimeter slices and place on the parchment paper lined baking sheet. Bake for 12-14 minutes until very lightly brown on the edges. Repeat with second half of the dough.

While cookies are cooling. Prepare frosting by creaming the cream cheese. Add in powdered sugar, cream and vanilla until smooth. Once cookies are cool top with the frosting.
