Chorizo Corn Queso Dip

Ingredients

8 oz. cream cheese

3 cloves garlic chopped

2 chopped green onions

1 cup shredded cheddar cheese

1/2 chopped red pepper

1 cup corn cernels

2 chorizo sausages

300 g package frozen spinach (thawed) and squeezed dry with paper towel

1 canned chipotle chili in adobo

1 tbsp chopped cilantro

Directions

Preheat oven to 400 degrees Fahrenheit.

In a food processor chop chipotle pepper till smooth.

Cook sausages in a pan over medium heat till cooked through. Chop chorizo into small pieces and put in a medium bowl.

Add remaining ingredients to the bowl and mix completely.

Empty content of the bowl into a medium casserole dish and bake for 30 minutes till heated through and the top is bubbly.

Serve with toasted bread of tortilla chips.
